The Harvest
Emerging from the heart of the Jalisco highlands, our Reposado Tequila mirrors the profound beauty of its origins. Drawn from agaves that have flourished in the mineral-rich, ruddy soils, every bottle encapsulates a dance of flavors—where the semi-sweet mouthfeel of the agave intertwines with deep herbal notes, rounded off with a distinctive aftertaste. Our seasoned Jimadores, guided by generations of expertise, deftly reveal the piña, the agave's soul.
The Cooking
The agaves cook for over 9 hours. This process softens the piña, making sugar extraction easier during milling.
After cooking, the agave pieces are transported to a milling area for sugar extraction. Here the cooked piñas are crushed in order to release juice that eventually becomes our final product.
The Fermenting
The extracted juice is fermented with yeast within large stainless-steel tanks. This natural process for the sugars to transform into alcohol takes 72 hours.
The Distillation
The ferments are then separated by heat and stem in steel still. We distill twice - first as a smashing process and second as a cleaning process. During this step, the alcohol level reaches roughly 60% and by reverse osmosis, the level is brought down to a more modest 40%.
The Aging
Its essence, once extracted, embarks on a transformative journey, resting gracefully in virgin oak barrels for 4 months. It is here, cocooned in the embrace of fresh wood, that our tequila adopts the gentle whispers of caramel, vanilla, and oak. The outcome? A Reposado Tequila that not only speaks of age-old traditions and meticulous craftsmanship but also of a rich sojourn within the sanctum of virgin oak. An elixir that's a tribute to both the passion of its makers and the generosity of nature.
The Bottling
Each bottle gets filled and hand-labeled one by one by an all female production line
